Up the protein factor with some chickpeas tossed with gutsy spices. Oh the places they'll go.
I make these a lot, simply because they are so easy and versatile. Throw a handful onto your salad or grain bowl, top a taco, stir into rice for a more interesting side. I make chicken salad for the kids and roll it into a wrap with slices of mango, lettuce, and these chickpeas. Yum!
Feel free to shake up the spices and experiment with different spice blends. Try garam masala, Ethiopian berbere, baharat, za'taar, chili powder...or whatever your crowd enjoys the most.
